Nutty egg mayo and crisp, tangy carrot rapée
on golden toasted slab — it's so good.. 💜

Instructions:
- Quickly beat 3 eggs, put them in a microwave-safe container and microwave for 2 minutes.
- Mix the cooked egg with 1 spoon Greek yogurt, a little mayonnaise, 1 spoon wholegrain mustard and a little honey.
- Mix the shredded carrot with a little salt, plenty of olive oil, a round of white balsamic and 1 spoon wholegrain mustard.
- Toast the slab golden in olive oil, spread with basil pesto, fill with lots of egg mayo and carrot rapée, and close — done!
