Mushroom Sandwich

Instructions:

1. 1.Trim the mushroom stems and stir-fry them over high heat in a dry pan to drive off the moisture.
2. 2.Add olive oil, a little salt and pepper, and a splash of balsamic.
3. 3.Spread basil pesto on the sourdough, and mayonnaise on one side as well.
4. 4.Slice pepper jack and colby jack, lay them on the bread and bake until the cheese melts.
5. 5.Finally add the mushrooms, drizzle with olive oil and cut in half — done.
