Instructions:
- Cook the pasta in salted water.
- Cut the bacon into bite-size pieces and mix 3 egg yolks with plenty of grated Grana Padano.
- Fry the bacon until golden, then add the cooked pasta and a ladle of pasta water and toss.
- Turn off the heat, move the pasta to a bowl, add the sauce and mix well.
