Carrot rapée gimbap 🥕
Surely nobody rolls gimbap worse than I do?
I love gimbap but it's so hard to make.. 🫠
Today I tried a carrot rapée version.
It doesn't look great, but believe it or not it's really delicious 🫶🏻
Ingredients:

Instructions:
- Julienne the carrots and salt them for about 10 minutes.
- Squeeze out the water and mix with 2 tbsp olive oil, 1 tbsp lemon juice, 1 tbsp wholegrain mustard, 1 tbsp stevia (or honey or sugar) and pepper.
- Shred some cabbage, mix it into 4 eggs with a pinch of salt and cook.
- Lay the egg on the gim, fill with plenty of carrot rapée and roll it up — done!
